I don’t eat breakfast.
I know, I know…it’s the most important meal of the day, blah, blah, blah. But guess what’s more important to me? 15 extra minutes of sleep!
So, let me introduce you to Breakfast Cookies.
They’re super easy to make because there’s only five ingredients, plus they’re healthy!

- 1.5 cups of oatmeal (I’ve had the best luck with the ‘quick cooking’ kinds)
- 3 veeeeery ripe bananas
- 1 cup of applesauce (Tried to find the sugar free applesauce but wasn’t having any luck at my most recent trip to the grocery store. Next time I’ll look harder!)
- Handful of dried cherries (You could also use dried cranberries or blueberries – or a combo!)
- Cinnamon to-taste
These breakfast cookies are super yummy and healthy. And EASY to grab on my way out the door in the morning. I also like to take one to work for a late afternoon snack.
I’m still trying to perfect storage of these cookies – they tend to get a little mushy. So far, I’ve found that keeping them in a Ziplock storage container, with the lid left open a bit, in the refrigerator, is the best way to keep them soft but not mushy.
